How to spec wine storage + display for NYC restaurants

Wine storage is the line item where every NYC fine-dining program either looks the part or gives itself away. The right cellar holds your bottles at the temperature they need (53-58°F for service, 55°F long-hold), at the humidity that keeps corks intact (60-70% RH), and in a layout that lets a sommelier pull a bottle in 30 seconds during the rush. The wrong setup ruins inventory you've already paid for and tells your guests you don't take wine seriously.
